Our Beef

WHAT IS IN A BOX?
 
Each box contains approximately 10 kilos of beef and will include a selection of the following:
  • Two large roasting joints.  (approximately 2 kilos/ 5lb each)
    One will be a premium roasting joint such as rib and the other a traditional joint such as topside or blade.
  • Two packs of Steaks.  Two steaks in each pack.
  • Two packs of mince – (approximately 905g/2lb per pack).
  • Two packs of stewing steak – (approximately 905g/2lb per pack).
 
All the beef is vacuum packed and labelled with the name and weight of the joint or cut.
 
Boxes cost £90 which includes local delivery at our discretion.
 Delivery further afield is via courier at a cost of £10.00 per box.
 
Background.
 
We buy in our beef store cattle in February from local Norfolk farms aged 7 – 12  months. 
These then spend the summer grazing on the salt marshes at Terrington, Norfolk.  This land has never been sprayed or fertilized and is rich in nutrients.   Their diet is supplemented by Norfolk feed potatoes or parsnips and a feed mix which we produce ourselves on the farm using our own wheat, barley and pulses.
 
   
They are butchered by a small local abattoir which is certified organic.  The journey travelled by the animals from the farm to the abattoir is less than 20 miles thus ensuring fewer food miles and, importantly, the stress caused to the cattle is minimal.  The carcass is hung for three weeks to enhance the flavour.
 
The animals’ health and welfare are paramount and they are raised in accordance with the ABM (Associated British Meat) standard (the little red tractor).
 
Availability.
 
The cattle only spend the summer on the salt marshes.  During the winter the ground becomes too wet and boggy.  In the winter months the salt marshes become the habitat for many migratory birds, such as the Brent Geese, who spend their winters with us.  The salt marsh beef, therefore, is only available for a certain period of time.  We sell the boxes from September through until July.  We also have a limited supply as, despite a growing demand for the product, we refuse to "speed the process up".  All the cattle are reared slowly and as naturally as possible.  This is not intensive farming.
